FOG

Fats, oils and grease discharged from food preparation or related operations.

Grease interceptor

A device intended to separate FOG and solids from wastewater before discharge.

Hydromechanical interceptor

A smaller interceptor that uses hydraulic flow-control principles and may be installed near fixtures.

Gravity interceptor

A larger tank that separates FOG through retention and gravity.

Pumping

Removal of accumulated contents by an authorized service provider.

Pretreatment

Measures used before wastewater enters a public sewer system.

Manifest

A service or waste-transport record used where required.

Baffle

An internal component that influences flow and separation.

Inlet and outlet tee

Piping arrangements that direct flow through an interceptor.

Authority having jurisdiction

The sewer, plumbing, health, environmental or building authority responsible for applicable requirements.
